(1)POHA DELIGHT!

If you are real hungry and need a snack real fast, here is the easiest, simplest, and tastiest recipe, to set your taste buds ting-a-ting

INGREDIENTS

1 cup puffed rice

½ cup grated coconut

¼

Cup sugar

METHOD

Soak the puffed rice in water for 10 minutes. Squeeze out the water and add grated coconut and sugar. Roll them in to any shape you like and serve.

 

 

(2)HONEY CORN MUFFIINS!

Winter is most here, and so is the need for a cup of tea .here is an easy yet mouthwatering recipe for muffins, to go with your cuppa………

INGREDIENTS

100 grams all-purpose flour

1 baking powder

 A pinch of salt

100 grams cornmeal

3 tablespoons honey

4 table spoons corn oil

225 grams creamed corn

1/3 cup water

Butter for serving

METHOD

Sift together flour, baking powder and salt .stir in corn meal. Add honey, raisins, oil, creamed corn and water. Spoon the batter into greased muffin cups. Bake at 180º C. or 360º F for 15 to 20 minutes, till it raises and is golden in color. Serve warm with butter.

 

(3)SWEETY SNACKS

Snack on these tasty NAN KATIAS…. They are hard to resist. But try them out first. They are quite easy to make….

INGREDIENTS

2 cup Maida (white flour)

1 cup ghee

½ cup ground sugar

Pinch of baking powder

METHOD

Mix the Maida, ghee, sugar and the baking powder, and knead it until it is soft. The roll out the dough about two inches thick, and cut it into small rounds, about two inches in diameter. Then, bake for about 15 minutes.

 

 (4)FILLING TIME

Try out the yummy chicken filling which tastes perfect with a bun…..

INGREDIENTS

35grams French fries

450 grams shredded chicken

¼ tsp salt

3 teaspoons chili sauce

4 table spoons tomato ketchup

2 tomatoes

½ green peppers

2 onions

5 table spoons oil

4 buns

METHOD

Heat the oil in a frying pan and fry the onions, green pepper, French fries, chopped tomatoes, salt and shredded chicken. Next, add the tomato ketchup and the chili sauce. Stir well and cook on a low flame till done. Serve it on a bun as a sandwich.

 

(5)SWEET PAKORAS

Try out something sweet, this time for the evening meal. Yeah, these dumplings are yummy and easy to make, too…..

INGREDIENTS

200 grams Maida

1 teaspoon ghee or cooking oil

150 grams sugar

25 grams desiccated coconut

50 grams milk powder

1 tea spoon baking powder

1 egg

 Oil for frying

METHOD

Mix all the ingredients in a bowl. Add water and mix it thoroughly to form thick batter. Heat oil in a pan, and pour tablespoons of batter it. Fry till golden brown. Serve hot.

 

 

(6)SEASONS SPECIAL

Isn’t it the right time for those yummy puddings? Yeah, try out this easy to make rise pudding and enjoy yourself during the holidays…..

INGREDIENTS

2 cup milk

1 cup cooked rice

1/3 cup sugar

1 tablespoon butter

1/3 cup raisins (or nuts)

2 eggs

¼ tablespoon salt

METHOD

Mix the milk, cooked and the butter. Beat the eggs, and add the sugar, salt raisins or nuts. Then slowly stir in the rice milk mixture. Pour it into a greased baking dish. Keep the dish in the pan of hot water. Place it an oven and bake at 350º F until it is set.

 

(7)PINE APPLE UPSIDE DOWN CAKE

Celebration of party, which means it, is party time! Why don’t you throw a party and treat your friends to this, yummy pine apple upside down cake?

INGREDIENTS

Bottom layer:-

¼ cup butter

½ cup brown sugar

8 pineapples ring

6 whole glace cherries

Top layer:-

2 cups cake flour

2 teaspoons baking powder

¼ teaspoon salt

½ cup castor sugar

2 eggs

2 teaspoons vanilla essence

1 cup pineapple juice

METHOD

For the bottom layer:-

Grease a 220 centimeters cake pan with the butter, and sprinkle a brown sugar. Arrange the pineapple rings in a single layer over the sugar and place a cherry in a center of each pine apple ring. Keep it aside.

For the top layer:-

Sift together the flour, baking powder and salt, and set aside in another bowl, beat the sugar and butter until fluffy. Beat in the sifted ingredients, eggs, and vanilla essence and pine apple juice.

Pour the batter over the bottom layer and bakes for 45 minutes at 175ºC/350ºF. The cake is done when skewer inserted in the centre of the cake comes away cleanly.

 

 

(8)SNACK TIME

Surprise your friends during evening by making these bread rolls. They are simply yummy…..

INGREDIENTS

1 packet noodles

1 cup cabbage, shredded finely

1 cup of mixed vegetables (peas, beans, carrots)

1 cup shredded chicken

1 teaspoon garlic, crushed

1 teaspoon Soya sauce

1 green chili finely chopped

2 teaspoons coriander leaves, finely chopped

Salt and pepper for taste

1 small loaf of bread

1 egg

Oil for frying

METHOD

Boil water and add the noodles. After one boil, remove from fire and drain.

Pour two tablespoons of oil in a pan. Add the crushed garlic. When brown, add the mixed vegetables, shredded chicken, cabbage, and noodles. Add Soya sauce, salt and pepper, green chilies, and coriander and keep aside.

Take a slice of bread; soak it in water and pres with both ends to drain the water. Add the fillings and roll it, covering all the sides. Repeat the process until all the slices have been used up. Dip in eggs and deep fry. Serve hot with ketchup, hot sauce or chutney.

 

 

(9)TASTE OF ITALY

PEPERONATA is a dish made of mixed pepper and the tomato stew, which keeps well and also freezes. It conjures up the taste of Italy…...

INGREDIENTS

1 large onion, peeled and sliced

6 to 8 large red, green and yellow peppers, washed, de-seeded and cut into thick strips.

 4 large ripe tomatoes skinned and chopped

4 cloves of garlic, peeled and crushed

Some pinches of oregano, salt and pepper

METHOD

Heat four tablespoons of olive oil in a large frying pan and fry the onion until it begins to brown. Add the sliced peppers and the garlic and fry for around five minutes, stirring regularly. Put in the tomatoes, a couple of large pinches of oregano salt and pepper. Stir, cover the pan and simmer slowly for about 30 minutes, until you have a nice gooey mixture.

 

 

(10)SWEET AND STICKEY!!

It’s time we had something that is sweet and sticky. Try out this pudding……

INGREDIENTS

1 cup soft brown sugar

½ cup cream

60 grams butter, melted

1 cup chopped nuts

1 cup caster sugar

100 grams butter

2 eggs

1 tea spoon vanilla essence

1 cup self raising flour

1 cup milk

METHOD

Preheat the oven to 180ºC. Brush an oven-proof dish with oil, and line the base with baking paper. Combine the brown sugar, cream and melted butter and pour into the dish. Spread nuts on a baking tray and toast them in the oven for five minutes. Sprinkle them over the mixture in the dish. Beat the 100 grams sugar until creamy. Add the eggs and vanilla essence, beating well after each addition. Fold in the sifted flour alternatively with the milk. Bake for 45-50 minutes.

 

 

(11)NUTTY POPCORN TOFFEES

This is an easy and tasty snack. Try it out…..

INGREDIENTS

2 table spoons oil

½ cup popcorn

¾ cup unsalted roasted peanuts

3 cups sugar

1 cup water

METHOD

Heat oil in a large pan, add corn, cook covered over high heat until corn pops, for about three minutes. Mix popcorns with peanuts. Divide corn and peanuts is lightly greased cup-cake baking dish. (Or in small heaps on a tray). Combine sugar and water in pan, stir over low heat until sugar dissolves. Bring to boil rapidly without stirring for about 10 minutes or until golden brown. Pour toffee over popcorn mixture. Leave until set. Remove from cup cake baking a dish, and store in an air tight container for up to three days. (Make 23-25 helpings approximately) 

 

 

(12)CHICKEN DELIGHT

Try out this chicken dish, SHASHALIK OR YAKITORI, as it is called in Japan. Yeah, it is Japanese yummy…..

INGREDIENTS

1/2 kg boneless of chicken

4 tablespoons Soya sauce

1 ½ table spoons sugar

½ table spoon ginger (crushed)

5 capsicums

10 spring onions

4 table spoons oil

Salt and pepper to taste

METHOD

Blend together the Soya sauce, sugar, ginger, salt, and pepper. Put in the chicken and marinate for half an hour. Slice the capsicums and onions and fry them separately in two tablespoons of oil, until tender. Drain the chicken and fry them almost crisp. Mix the chickens, onions, and capsicum in a plate and serve.

 

 

(13)BROWNIES, ANYONE

Holidays are most here, and soon you will have all the time in the world to try out goodies. Well why don’t you start with brownies?

INGREDIENTS

2 squares of unsweetened

Chocolate

2 cups sugar

2 eggs

1 tablespoon vanilla

½ cup butter

2/3 cup flour

½ table spoon baking powder

¼ table spoon salt

METHOD

Melt the unsweetened chocolate and butter in a saucepan, on very low heat. Mix the flour, sugar, baking powder and salt. Break the eggs, one at a time and mix with the chocolate mixture. Bake for half an hour.

 

 

(14)SHAKE, SHAKE…..

Deliciously yummy chocolate milk shake…. Yes that’s the recipe for this week. Try out this easy to make creamy delight…..

INGREDIENTS

½ cup milk

2 table spoons drinking chocolate

½ cup hot water

1 small slab vanilla ice cream

A little grated chocolate

METHOD

Pour the milk in the blender. Mix the drinking chocolate with the hot water and add to the milk. Add two tablespoons ice cream. Switch on the machine and whisk for a minute. Pour the mixture into a tall glass, and top it with a large scoop of ice-cream. Sprinkle a little grated chocolate and serve.

 

 

(15)CHILL OUT!!!

Chill yourself with this cold almond Pista Kulfi. And invite your friends over, too. They’ll simply enjoy it……….

INGREDIENTS

2 cans evaporated milk

3 cups cream

1 ½ cup sweetened condensed milk

½ cup blanched, minced almonds

½ cup powdered pistachio nuts

1 tea spoon cardamom powder

METHOD

Combine evaporated milk, cream, and sweetened condensed milk. Add almonds, pistachio and cardamom. Whip in an electric blender on medium speed for three minutes for till well-blended. Fill in kulfi moulds and freeze for at least eight hours.Unmould to serve.

 

(16)STRAWBERRY SODA

Try out BABBLOO’S cool and creamy frozen dessert on a sunny day. It is a real delight……

INGREDIENTS

300 ml milk

300 grams frozen, sliced strawberries, partially thawed

600 ml strawberry ice-cream

450 ml soda water or chilled fizzy strawberry drink

METHOD

In a food processor or blender, blend milk and strawberry for 15 seconds until smooth. Pour it into tall glasses. Add scoop of strawberry ice-cream to glasses. Slowly add soda or the fizzy drink to fill the glass. (Be careful when you pour the fizzy drink). Serve immediately.

 

 

(17)CHOCO BALLS

Chocolate is a favorite snack for many. Make it into balls---- it’s yummy?

INGREDIENTS

1 tin condensed milk

2 teaspoon cocoa powder

20 plain biscuits

METHOD

Mix the condensed milk and cocoa powder paste. Crush the biscuits and add it to the paste. Make small balls out of the mixture and arrange in a tray. Serve the chocolate balls chilled.  

 

 

(18)BAKED POTATOES

Ever wondered how to make stuffed jacket potatoes? Well, here it is. And it is not as difficult as you thought……

INGREDIENTS

4 large well-scrubbed potatoes

60 grams butter

90 grams chopped ham

90 grams grated cheese

A little milk

1 table spoon chopped parsley

Salt and black pepper

METHOD

Prick the potatoes with a fork. Put them on a baking tray and bake for one hour. Push a skewer through the biggest potato. If it is soft you will know that it is cooked.

Then, cut the potatoes in half, lengthways, and scoop out the middles. Mash the scooped –out potatoes in a bowl. And rest of the ingredients and mix everything together.

Fill the potatoes skins with the mixtures and bake for another 15 minutes. Decorate it with parsley.

 

 

(19)CHOCO CAKE!!!!

Try out this egg less chocolate cake. It is something that you can make, without breaking into a sweat ’coos it’s very easy……..

 INGREDIENTS

1 ½ cup flour

1 cup powdered sugar

3 tablespoons cocoa

¾ teaspoons baking powder

1 cup water

¼ cup water

¼ cup oil

1 table spoon vinegar

1 table spoon essence

¾ table spoon baking soda

Salt to taste

 METHOD

Sift the flour, sugar, baking powder, soda, and salt. Add the vanilla essence, vinegar, water, oil to the mixture. Beat until smooth. Pour the batter into a greased tin. Bake at 175ºC (pre-heated oven) for 30 to 40 minutes.

 

 

(20)SNACK CAKE!!!

Try out these minced meat balls which can be eaten at all times. And your friends will love them, too……

INGREDIENTS

¼ kilograms minced meat

1 tablespoon corn flour

1 teaspoon black pepper

1 teaspoon salt

1 egg

METHOD

Mix all the ingredients and make small balls. Fry in oil until brown. Serve with salad.

 

 

(21)ALMOND DELIGHT!!!

Try out this dish which is rich in almonds, simple to make and tastes scrumptious………

INGREDIENTS

1 cup

2 ½ cups sugar

2 cups ghee

1 table spoons saffron

1 table spoon hot milk

METHOD

Wash and cook the almonds in hot water for five minutes. Remove the skin and grind coarsely.

In a thick bottomed pan, mix the almond paste, sugar and one cup of ghee. Cook on low heat, ensuring the paste does not changes the color. When the consistency becomes thick, add the remaining ghee and cook until the ghee separates. Soak the saffron in a table spoon of hot milk and add to the mixture. Cook for another five minutes.

Set the mixture in a greased plate and cut into diamond shapes. Serve chilled.

 

 

(22)HOT ‘N’ SPICY!!!

It’s cold out here! Keep warm by having a cup of delicious, piping hot carrot and cabbage soup. It’s easy to make, too……

INGREDIENTS

2 grated carrots

½ cup vinegar

1 cup grated cabbage

1 tea spoon Soya sauce

1 ½ tea spoons oil

 2 cups water

 1teaspoon chili sauce

1 teaspoon corn flour (optimal)

1 green chilly finely chopped

Salt to taste

A pinch of pepper

A soup cube

METHOD

Heat the oil in a pan and add the grated carrots and cabbage. Stir for a while and then add the Soya sauce, chilly sauce, salt and the soup cube. Mix well, cover the pan and cook for two minutes. Then, add two cups of water to mixture and let it boil for two to three minutes. Add the vinegar and remove for fire. Add pepper and the green chilies and serve. If you want the soup to be a little thick, mix the corn flour in a little water and pour it into the soup while it boils.

 

 

(23)FRUIT DELIGHT!!!!

Want to surprise your friends? Serve this creamy delight with fruits which is simple to make……

INGREDIENTS

½ cup strawberries

1 banana (sliced)

1 apple (cubed)

1 mango (cubed)

 2 eggs yolk

2 table spoons honey

1 tea spoon vanilla essence

1 cup cream

METHOD

Mix all the fruits in a bowl and spoon it in the serving glasses.

In another bowl, beat the egg yolks, honey and vanilla essence. Finally, add the cream and beat till creamy.

Pour the topping on the fruits and served chilled.

 

 

(24) COOL DESSERT!!!!

The chef of the week is BABBLOO THE GREAT. He made the easy recipe of CHOCOLATE MOUSE that’s just perfect for a chilled dessert, now that the weather is becoming warm….

INGREDIENTS

2 eggs separated

60 grams NESQUICK, (five heaped table spoons full of cocoa)

4 table spoons warm water

1 tin nestle cream (170 grams)

2 table spoons sugar

METHOD

Mix the NESQUICK (cocoa) and sugar with the water to make a paste. Add the egg yolk, beat mixture until creamy and then add nestle cream. To another bowl, whisk egg whites until stiff, then fold into chocolate mixture delicately. Pour into dessert glasses and chill.

 

 

(25)HOT AND SWEET!!!

Pancakes are all times favorites. And this one --- with some chilly and honey ---- is no exception….

INGREDIENTS

2 eggs

1 cup plain flour

½ cup milk

Pinch of salt

Pinch of chilly powder

Honey for spreading

Ghee

METHOD

Mix the eggs, flour, milk, salt and chilly powder in a bowl. Keep a pan on fire, and when warm, spread some ghee on it. Then, spread a little of the flour mixture on the pan. When one side is done, turn it over and cook the other side.

When done, put it on a plate, and spread ghee. Repeat process until all the mixture is used up.

 

 

 

(26)CRISPY CRUMBS!!!!

Omelettes are always hot favorites. And more so, if they are crispy. Well, try out these crumb Omelettes ….

INGREDIENTS

2 eggs

1 table spoon yoghurt

 2 heaped table spoons of bread crumbs

A pinch of salt

Butter   

METHOD

Break the eggs into a medium sized bowl and beat them for a few seconds. Add the bread crumbs to it and mix till it becomes thick. Add one tablespoon yoghurt to it. Mix well and add salt.

Now, melt the butter in a frying pan. Butter it well, because the omelette has a tendency to stick very badly. Pour the thick mixture into it and fry. Then, turn it over only for none or 10 seconds, and serve hot.
